The 12 Best Foods

Island Epicure

If you would list your ten favorite foods, how many of these would be among them? The first tent list comes from Nutrition Action, a newsletter published by the Center for Science in the Public Interest. I have added the 11th and 12th.
Sweet Potatoes
Mangoes
Unsweetened Greek yogurt
Broccoli
Wild salmon
Gluten-free or low gluten bread
Beans
Watermelon
Butternut squash
Leafy greens
Lean beef
Chicken

I approve their list and add lean grass-fed beef and buffalo and cchicken. Red meat has had a very bad press lately. It does not deserve it. Even a little saturated fat is a nutritional necessity. It provides the skin on your brain cells.

Lean sliced beef from the deli provides an easy high-protein ingredient for summer meals. We choose it for Thai beef salad. It provides zinc and Vitamin B12, too. I believe I’ve given you the recipe in the past, but it’s worth repeating.

THAI BEEF SALAD
4 servings

4 large leafy lettuce leaves
6 to 8 mint leaves, shredded
8 cilantro leaves
1 stalk lemon grass, only bottom 2/3, minced (optional)
1 lb. lean cooked beef, sliced into thin strips 2"x1/2"
4 center strips from red onion or 4 Tablespoons chopped rd onion or green onion

Dressing:
2 to 4 garlic cloves, minced
1 hot green pepper, minced
4 teaspoons lime or lemon juice
3 teaspoons fish sauce (Nam Pla)
dash sugar or stevia

Garnish:
2 Tablespoons dried onion flakes
½ Tablespoon, or to taste, dried red chili pepper flakes

Wash the lettuce leaves under running water to remove pesticide residue if using store-bought, non-organic lettuce. Pat themdry between clean dishtowels or paper towels. Place one leaf on each salad plate or arrange them all on a large platter.

Sprinkle with the lemon grass if using. Lay on in this order the beef slices, the mint, the cilantro, and the onion.
Mix the dressing and divide it among the salads.
